- ½ cup black lentils use canned, low-sodium, and drain
- ¼ tsp salt
- ⅛ tsp black pepper
- 2 ¼ tsp extra-virgin olive oil
- 2 ¼ tsp red wine vinegar

- 2 leaves romaine lettuce chopped

Warm the lentils in pan on stovetop.
Once warmed, place lentils over sliced lettuce, and add grilled vegetables.
Combine red wine vinegar and olive oil in a bowl to create a dressing and pour it over the lentil and veggies.
Salt and pepper to taste.
