Ingredients
- ½ cup black lentils (use canned, low-sodium, and drain)
- ¼ tsp salt
- â…› tsp black pepper
- 2 ¼ tsp extra-virgin olive oil
- 2 ¼ tsp red wine vinegar
- ½ cup vegetables of your choice (recommended - zucchini, red pepper, and onion (may also look up our Grilled Vegetable Recipe))
- 2 leaves romaine lettuce (chopped)
Instructions
- Warm the lentils in pan on stovetop.
- Once warmed, place lentils over sliced lettuce, and add grilled vegetables.
- Combine red wine vinegar and olive oil in a bowl to create a dressing and pour it over the lentil and veggies.
- Salt and pepper to taste.
