Spinach Quinoa Salad

Ingredients

Salad

  • ¼ cup quinoa cooked according to package directions; can substitute farro
  • 1 cup spinach fresh, baby
  • 4 grape tomatoes halved
  • 3 tbsp chickpeas canned, rinsed and drained
  • 1 tsp parsley fresh, chopped
  • 1 tsp green onion chopped
  • 1" slice avocado

Dressing

  • 2 tsps olive oil
  • ½ tsp lemon juice
  • 1 pinch garlic powder
  • hot pepper sauce to taste
  • salt and pepper to taste

Instructions

  • In a large bowl, toss spinach and warm quinoa, allowing the spinach to wilt slightly. Add tomatoes, chickpeas, parsley and green onions.
  • Whisk together dressing ingredients. Toss with salad.
