Salad
- ¼ cup quinoa cooked according to package directions; can substitute farro
- 1 cup spinach fresh, baby
- 4 grape tomatoes halved
- 3 tbsp chickpeas canned, rinsed and drained
- 1 tsp parsley fresh, chopped
- 1 tsp green onion chopped
- 1" slice avocado
Dressing
- 2 tsps olive oil
- ½ tsp lemon juice
- 1 pinch garlic powder
- hot pepper sauce to taste
- salt and pepper to taste

In a large bowl, toss spinach and warm quinoa, allowing the spinach to wilt slightly. Add tomatoes, chickpeas, parsley and green onions.
Whisk together dressing ingredients. Toss with salad.
