Mushroom Quinoa Soup

This is a satisfying, delicious, and comforting meal packed with protein, fiber, and vitamins. It's a great way to enjoy quinoa which is one of the few plant based complete proteins.

Ingredients

  • 1 ½ cups vegetable broth low-sodium and organic is preferable
  • ¼ cup yellow onion chopped
  • ¼ cup carrots diced
  • ¼ cup celery diced
  • ¼ cup mushrooms sliced
  • ¾ cloves fresh garlic minced
  • ¼ cup cooked quinoa (follow package directioins)
  • ¼ tsp ground black pepper

Instructions

  • Put all ingredients into a large pot and bring to a boil, then reduce heat to low. Cover and cook until Quinoa is soft, approx. 50 minutes.
