Ingredients 

  • 1 ½ cups vegetable broth (low-sodium and organic is preferable)
  • ¼ cup yellow onion (chopped)
  • ¼ cup carrots (diced)
  • ¼ cup celery (diced)
  • ¼ cup mushrooms (sliced)
  • ¾ cloves fresh garlic (minced)
  • ¼ cup cooked quinoa ((follow package directioins))
  • ¼ tsp ground black pepper

Instructions 

  • Put all ingredients into a large pot and bring to a boil, then reduce heat to low. Cover and cook until Quinoa is soft, approx. 50 minutes.
