Ingredients
- 1 ½ cups vegetable broth (low-sodium and organic is preferable)
- ¼ cup yellow onion (chopped)
- ¼ cup carrots (diced)
- ¼ cup celery (diced)
- ¼ cup mushrooms (sliced)
- ¾ cloves fresh garlic (minced)
- ¼ cup cooked quinoa ((follow package directioins))
- ¼ tsp ground black pepper
Instructions
- Put all ingredients into a large pot and bring to a boil, then reduce heat to low. Cover and cook until Quinoa is soft, approx. 50 minutes.
