Tomato Soup

- ½ cup vegetable broth organic, low-sodium is best (can substitute chicken broth)
- ¼ cup onion chopped
- ¼ cup chopped celery
- 1 cup tomatoes diced, canned
- ¼ cup yogurt can substitute non-dairy, unsweetened milk
- salt and pepper to taste
- 1 tbsp fresh basil sliced
Get Recipe Ingredients
Put broth, onion, celery, and tomatoes in a pan and bring to a boil.
Reduce heat and simmer for 30 minutes.
Put tomato mixture in a blender and blend until smooth and pour back in pot.
Add yogurt or milk, salt and pepper.
Serve warm soup in a bowl and top with basil.
