Instructions
Put lettuce, diced red peppers, and diced cucumbers around the outside of a bowl/plate.
Mix half of the sesame oil, rice vinegar, and soy sauce together and then mix into the cooked, warm rice noodles (cooked according to the package).
Put the seasoned noodles in the center of the bowl/plate.
Stir-fry shrimp in a pan over medium-high heat using the other half of the sesame oil for 3 minutes or until cooked through (don't overcook will become rubbery).
Place cooked shrimp, mint, basil, and chopped nuts on top of the noodles.
For dressing, mix the last 5 ingredients together until well blended. Pour dressing over noodles and lettuce. Enjoy!
