Portobello Burger
This recipe swaps out the traditional beef patty for a hearty portobello mushroom cap, grilled to perfection and topped with all your favorite fixings.

1 portobello mushroom large cap ½ tsp olive oil ½ whole wheat bun organic or GF or 1 slice of whole wheat bread 1 tbsp blue cheese crumbled, optional ½ cup arugula can substitute other lettuce 1 slice tomato

Heat grill to medium or oven to 350º.
Brush both sides of the mushroom with olive oil. Put the mushroom on the grill or in the oven for 4 minutes on each side.
Place mushroom caps on bread or bun.
Sprinkle with blue cheese, and top with tomato, arugula, and lettuce. Eat open-faced.
