Ingredients
- 1 portobello mushroom (large cap)
- ½ tsp olive oil
- ½ whole wheat bun (organic or GF or 1 slice of whole wheat bread)
- 1 tbsp blue cheese (crumbled, optional)
- ½ cup arugula (can substitute other lettuce)
- 1 slice tomato
Instructions
- Heat grill to medium or oven to 350º.
- Brush both sides of the mushroom with olive oil. Put the mushroom on the grill or in the oven for 4 minutes on each side.
- Place mushroom caps on bread or bun.
- Sprinkle with blue cheese, and top with tomato, arugula, and lettuce. Eat open-faced.
