Shrimp and Veggie Fried Rice

- ¼ cup vegetable broth can substitute chicken broth
- 1 ½ tsp ginger grated
- 1 garlic clove minced
- ⅓ yellow onion thinly sliced
- ⅓ red pepper thinly sliced
- ⅔ cup broccoli chopped into bite-sized pieces
- ⅔ cup shrimp raw, peeled
- ⅔ tbsp sesame oil
- 4 tsp soy sauce can substitute Bragg Liquid Aminos
- 2 tsp sesame oil
- 1 egg beaten
- 1 ⅓ cups brown rice cooked, organic is preferred
Get Recipe Ingredients
In a medium size pot pour vegetable/chicken broth and cook over medium heat.
Add garlic and ginger and cook for 3 minutes.
Add onion, pepper, and broccoli and simmer until vegetables are slightly soft.
Add shrimp to pot and simmer an additional 5 minutes. Stir
Stir in soy sauce.
In a separate large pan add sesame oil. Once pan and oil are hot add eggs and stir slowly until eggs are set.
Add the brown rice and stir.
Add vegetables and broth to rice and stir completely.
If you want to spice it up, add some hot sauce! If you prefer to sweeten it up, add some diced pineapple.
