Shrimp and Veggie Fried Rice

Fried rice isn't just for takeout, you can make this healthy and delicious version at home!

Ingredients

  • ¼ cup vegetable broth can substitute chicken broth
  • 1 ½ tsp ginger grated
  • 1 garlic clove minced
  • yellow onion thinly sliced
  • red pepper thinly sliced
  • cup broccoli chopped into bite-sized pieces
  • cup shrimp raw, peeled
  • tbsp sesame oil
  • 4 tsp soy sauce can substitute Bragg Liquid Aminos
  • 2 tsp sesame oil
  • 1 egg beaten
  • 1 ⅓ cups brown rice cooked, organic is preferred

Instructions

  • In a medium size pot pour vegetable/chicken broth and cook over medium heat.
  • Add garlic and ginger and cook for 3 minutes.
  • Add onion, pepper, and broccoli and simmer until vegetables are slightly soft.
  • Add shrimp to pot and simmer an additional 5 minutes. Stir
  • Stir in soy sauce.
  • In a separate large pan add sesame oil. Once pan and oil are hot add eggs and stir slowly until eggs are set.
  • Add the brown rice and stir.
  • Add vegetables and broth to rice and stir completely.
  • If you want to spice it up, add some hot sauce! If you prefer to sweeten it up, add some diced pineapple.
