Ingredients

  • 2 ⅔ ounces brown rice noodles usually found in the Asian section of the store
  • 2 tsp coconut oil
  • pound medium shrimp peeled and deveined
  • ¼ cup snow peas trimmed
  • 1 ⅓ scallions thinly sliced
  • cloves garlic chopped
  • 4 tsp oyster sauce found in the Asian section of the store
  • 2 tsp rice vinegar
  • 1 tsp soy sauce Bragg Liquid Aminos is a great option for gluten free
  • crushed red pepper for serving

Instructions

  • Cook Noodles according to package.
  • Heat oil in a large pan over high heat. Add shrimp, snow peas, scallions and garlic. Stir while cooking. Cook for about 3 minutes.
  • Add oyster sauce, vinegar, and soy sauce. Stir.
  • Add the noodles and stir.
  • Serve and sprinkle with crushed red pepper.
