Chicken Breast with Tomatoes and Artichoke

- 1 - 4 oz chicken breast
- 2 ¼ tsp olive oil divided use
- ¾ tsp flour
- ⅜ cup diced tomatoes
- ⅜ cup chicken broth low sodium is best (can substitute vegetable broth)
- ¼ cup artichoke hearts drained and quartered
- 4 tsp parsley
- ⅛ of lemon juice freshly squeezed
- ¾ clove garlic optional
- 1 tbsp capers

Chicken
Thinly slice your chicken (or ask your butcher to do it for you)
Heat 3/4 tsp olive oil in frying pan over medium heat. Add the chicken and cook for about 5 minutes on each side or until chicken is cooked through
Sauce
Put flour into a separate pan
Add 1 1/2 tsp olive oil
Turn stove on to medium-low heat and mix the flour and oil
Once flour has dissolved, add the diced tomatoes, chicken broth and artichoke
Mix together
Add parsley, lemon juice, garlic (optional) and capers
Cook for about 15 minutes
Place chicken on top of some brown rice, pour sauce over chicken and add fresh parsley to the top of the dish!
