Sweet & Spicy Asian Shrimp

Ingredients

  • ¼ lb shrimp medium sized, peeled and deveined
  • 1 tbsp vegetable broth chicken broth can be used as a substitute - low-sodium, organic is ideal
  • ½ clove garlic minced
  • 1 ½ tsp ginger minced
  • 1 tbsp lemon juice fresh
  • 1 ½ tsp soy sauce use Braggs Liquid Amino Acid as substitute for gluten-free
  • 1 tbsp orange juice
  • tsp red pepper flakes
  • cup fresh basil chopped

Instructions

  • Put broth in a pan and cook over high heat until it reaches a low boil.
  • Turn heat to medium and add all ingredients EXCEPT the shrimp and basil. Cook over medium heat for 5 mins.
  • Add shrimp and basil and cook for another 4 mins. or until shrimp are just cooked.
  • Pour over brown rice or enjoy on its own.
