- 1 ½ cups spring greens mix or any greens of your choice
- ⅛ English cucumber very thinly sliced
- ⅛ red onion peeled and very thinly sliced
- 2 tbsp pepitas can substitute any toasted nuts of choice
Dressing
- 2 ¼ tsp olive oil
- ¾ tsp lemon juice can substitute red wine vinegar
- ¼ tsp Dijon mustard
- ¼ clove garlic minced (or 1/2 teaspoon garlic powder)
- salt and pepper to taste
