Turkey Skillet with Sweet Potatoes and Kale

Ingredients

  • ¼ lb ground turkey lean
  • ¼ cup onion diced
  • ½ cup sweet potato peeled and diced into chunks
  • ¾ cup kale can substitute spinach
  • 1 tbsp goat cheese crumbled
  • salt and pepper to taste
  • parsley optional

Instructions

  • Heat pan on stovetop and add ground turkey and diced onion. Brown meat, breaking up until cooked through.
  • Add the sweet potatoes and cover. Cook until tender, about 15 minutes.
  • Add kale (or spinach) and cook until wilted.
  • Add the goat cheese.
  • Garnish with parsley, if desired.
