Turkey Skillet with Sweet Potatoes and Kale

This one-pot meal is a scrumptious combination of textures and flavors.

Ingredients 

  • ¼ lb ground turkey (lean)
  • ¼ cup onion (diced)
  • ½ cup sweet potato (peeled and diced into chunks)
  • ¾ cup kale (can substitute spinach)
  • 1 tbsp goat cheese (crumbled)
  • salt and pepper (to taste)
  • parsley (optional)

Instructions 

  • Heat pan on stovetop and add ground turkey and diced onion. Brown meat, breaking up until cooked through.
  • Add the sweet potatoes and cover. Cook until tender, about 15 minutes.
  • Add kale (or spinach) and cook until wilted.
  • Add the goat cheese.
  • Garnish with parsley, if desired.
