Ingredients
- ¼ lb ground turkey (lean)
- ¼ cup onion (diced)
- ½ cup sweet potato (peeled and diced into chunks)
- ¾ cup kale (can substitute spinach)
- 1 tbsp goat cheese (crumbled)
- salt and pepper (to taste)
- parsley (optional)
Instructions
- Heat pan on stovetop and add ground turkey and diced onion. Brown meat, breaking up until cooked through.
- Add the sweet potatoes and cover. Cook until tender, about 15 minutes.
- Add kale (or spinach) and cook until wilted.
- Add the goat cheese.
- Garnish with parsley, if desired.
