Pork Stroganoff

- 1 ½ tsp olive oil
- ⅙ lb pork cooked, diced; can substitute chicken
- ¼ cup onion chopped
- ½ cup mushrooms sliced
- ½ cup zucchini sliced
- ½ tsp Worcestershire sauce
- ¾ tbsp flour may add more for thicker sauce
- ½ cup milk
- 2 tbsp sour cream reg, oat, cashew
- 1 tbsp plain Greek yogurt
- ¼ cup cooked rice cooked according to package; can substitute quinoa or pasta
- salt and pepper to taste

Put oil in a large skillet over medium heat. Add onion, zucchini and mushrooms and cook for 5 minutes.
Add flour to the skillet, stir slowly.
Add milk, stirring until sauce begins to thicken.
Add salt, pepper, Worcestershire sauce, sour cream and yogurt. Stir, and heat through.
Serve over quinoa, rice or pasta if desired, and enjoy!
