Pork Stroganoff

This is a healthy way to enjoy the decadent and timeless pork stroganoff!

Ingredients

  • 1 ½ tsp olive oil
  • lb pork cooked, diced; can substitute chicken
  • ¼ cup onion chopped
  • ½ cup mushrooms sliced
  • ½ cup zucchini sliced
  • ½ tsp Worcestershire sauce
  • ¾ tbsp flour may add more for thicker sauce
  • ½ cup milk
  • 2 tbsp sour cream reg, oat, cashew
  • 1 tbsp plain Greek yogurt
  • ¼ cup cooked rice cooked according to package; can substitute quinoa or pasta
  • salt and pepper to taste

Instructions

  • Put oil in a large skillet over medium heat. Add onion, zucchini and mushrooms and cook for 5 minutes.
  • Add flour to the skillet, stir slowly.
  • Add milk, stirring until sauce begins to thicken.
  • Add salt, pepper, Worcestershire sauce, sour cream and yogurt. Stir, and heat through.
  • Serve over quinoa, rice or pasta if desired, and enjoy!
