Greek Zucchini Boats

Ingredients

  • ½ tsp olive oil
  • ½ zucchini
  • 2 tbsp onion chopped
  • lb ground beef can use ground chicken or sausage
  • tsp cinnamon
  • ¼ tsp oregano
  • ¼ cup tomato sauce
  • 1 ½ tsp kalamata olives diced; optional
  • 1 tbsp goat cheese crumbled; optional

Instructions

  • Preheat oven to 375º
  • Slice zucchini lengthwise. Scoop out the inside seeds of the zucchini using a small spoon or a small knife cutting down at an angle toward the center. Take the part you scooped out and finely chop.
  • Put oil in a pan over medium heat. Add chopped onion and cook until golden brown (about 4 mins). Add the zucchini (that you just scooped out) and the ground beef. Chop meat into small pieces while browning.
  • When the meat is fully cooked, add the cinnamon, oregano, tomato sauce, and olives. Cook over low heat for 5 minutes, remove from heat, and fill the scooped-out zucchini. Sprinkle with the goat cheese.
  • Place the "boats" on a baking sheet and bake for 25 minutes or until the zucchini is tender and the cheese is slightly browned.
