Ingredients
- 1 tsp olive oil
- 1 zucchini
- ¼ cup onion (chopped)
- ¼ lb ground beef (can use ground chicken or sausage)
- ¼ tsp cinnamon
- ½ tsp oregano
- ½ c tomato sauce
- 1 tbsp kalamata olives (diced; optional)
- 2 tbsp goat cheese (crumbled; optional)
Instructions
- Slice zucchini lengthwise. Scoop out the inside seeds of the zucchini using a small spoon or a small knife cutting down at an angle toward the center. Take the part you scooped out and finely chop.
- Put oil in a pan over medium heat. Add chopped onion and cook until golden brown (about 4 mins). Add the zucchini (that you just scooped out) and the ground beef. Chop meat into small pieces while browning.
- When the meat is fully cooked, add the cinnamon, oregano, tomato sauce, and olives. Cook over low heat for 5 minutes, remove from heat, and serve.
