Ingredients

  • 1 cup chicken broth can substitute vegetable broth
  • 1 cup spinach can substitute power greens
  • ¼ cup carrots grated or shaved
  • 4 cheese tortellini
  • ¼ tsp parmesan cheese grated

Instructions

  • Add broth to a pot and bring to a simmer over medium heat. Add carrots and spinach and cook for 3 minutes. Add tortellini to simmering broth and cook until soft, about 5 min.
  • Pour into a bowl and top with parmesan cheese.
