PB & J Pancakes

These are great for breakfast, a snack, or dessert.

Ingredients

  • 1 banana
  • 1 egg
  • 1 tsp peanut butter can substitute any nut butter just be sure the only ingredients are nuts and salt
  • ½ cup pecans or not of your choice
  • 1 tsp butter can substitute coconut oil
  • ½ cup strawberries sliced; can substitute blueberries

Instructions

  • Place banana, egg, nut butter & pecans in a blender. Blend until smooth.
  • Put butter in a pan. Heat the pan until the butter is melted.
  • Pour the batter in the pan to form small pancakes. Turn to med/low heat and cover. Cook for 2-3 min and flip pancakes. Cook uncovered for 2 additional minutes.
  • Heat the berries in a pan on the stovetop until soft and juices are released.
  • Pour the berry sauce over the pancakes and enjoy.
