Beet Salad with Greens

Ingredients

  • 1 cup mixed greens can substitute power greens
  • ½ cup beets cooked, chopped; can be found prepared in the produce section
  • 1 oz goat cheese crumbled; omit if dairy-free
  • 1 tbsp hazelnuts chopped; optional
  • ¾ tbsp olive oil
  • 1 tsp balsamic vinegar can substitute apple cider vinegar
  • salt & pepper to taste

Instructions

  • Dice beets. 
  • Toast chopped hazelnuts slightly in a hot pan, careful not to burn. 
  • Mix the olive oil and vinegar, and add salt and pepper to taste. 
  • Toss all the ingredients together for a yummy salad.
