Ingredients
- 1 cup mixed greens (can substitute power greens)
- ½ cup beets (cooked, chopped; can be found prepared in the produce section)
- 1 oz goat cheese (crumbled; omit if dairy-free)
- 1 tbsp hazelnuts (chopped; optional)
- ¾ tbsp olive oil
- 1 tsp balsamic vinegar (can substitute apple cider vinegar)
- salt & pepper (to taste)
Instructions
- Dice beets.Â
- Toast chopped hazelnuts slightly in a hot pan, careful not to burn.Â
- Mix the olive oil and vinegar, and add salt and pepper to taste.Â
- Toss all the ingredients together for a yummy salad.
