Ingredients 

  • 1 cup mixed greens (can substitute power greens)
  • ½ cup beets (cooked, chopped; can be found prepared in the produce section)
  • 1 oz goat cheese (crumbled; omit if dairy-free)
  • 1 tbsp hazelnuts (chopped; optional)
  • ¾ tbsp olive oil
  • 1 tsp balsamic vinegar (can substitute apple cider vinegar)
  • salt & pepper (to taste)

Instructions 

  • Dice beets. 
  • Toast chopped hazelnuts slightly in a hot pan, careful not to burn. 
  • Mix the olive oil and vinegar, and add salt and pepper to taste. 
  • Toss all the ingredients together for a yummy salad.
