Tomato Reduction

This is a simple, all-purpose red sauce that can be used in almost any Italian-influenced dish.

Ingredients

  • ½ cup grape tomatoes halved
  • ½ clove garlic minced
  • fresh basil chopped or dried (doubled)
  • ¾ tsp oil

Instructions

  • Put oil in a pan and add garlic. Cook for 3 minutes over medium heat. Add tomatoes and turn heat to low. Cover and cook 5 minutes or until softened. Add basil and pour over chicken.
