- ¼ head cauliflower coarseley chopped; can substitute cauliflower rice
- ½ chicken breast
- 1 ½ tsp lemon juice
- ¼ tsp dried oregano divided
- ¼ cup cucumbers diced
- ¼ cup peppers diced
- ½ cup tomatoes diced
- 2 tbsp kalamata olives
- 2 tbsp feta cheese omit if dairy-free
- 1 tbsp balsamic vinegar
- 2 tsp olive oil

Cut the chicken into bite-size pieces.
Put 1/3 of the olive oil in a pan. Place chicken, lemon juice, and the oregano in a pan and cook over medium heat for about 7 minutes.
Place chopped cauliflower in a blender and blend until resembles rice grains.
Put 1/3 of the olive oil in a separate pan and heat on medium heat. Add the cauliflower and salt. Cover and cook for about 5 min or until just soft.
Divide the “rice” in bowls. Top with cooked chicken and then with artichoke, tomatoes, olives, and feta. M
Blend the vinegar, remaining oil, and oregano. Pour the dressing equally onto each bowl.
