Ingredients
- ¼ head cauliflower (coarseley chopped; can substitute cauliflower rice )
- ½ chicken breast
- 1.5 tsp lemon juice
- ¼ tsp dried oregano (divided)
- ¼ cup cucumbers (diced)
- ¼ cup peppers (diced)
- ½ cup tomatoes (diced)
- ⅛ cup kalamata olives
- ⅛ cup feta cheese (omit if dairy-free)
- 1/16 cup balsamic vinegar
- 2 tsp olive oil
Instructions
- Cut the chicken into bite-size pieces.
- Put 1/3 of the olive oil in a pan. Place chicken, lemon juice, and the oregano in a pan and cook over medium heat for about 7 minutes.
- Place chopped cauliflower in a blender and blend until resembles rice grains.
- Put 1/3 of the olive oil in a separate pan and heat on medium heat. Add the cauliflower and salt. Cover and cook for about 5 min or until just soft.
- Divide the “rice” in bowls. Top with cooked chicken and then with artichoke, tomatoes, olives, and feta. M
- Blend the vinegar, remaining oil, and oregano. Pour the dressing equally onto each bowl.
