Easy Baked Lemon Chicken

This easy-baked lemon chicken is perfect for your busy weeknights but delicious enough to make for a special occasion!

Ingredients

  • 1 chicken breast boneless, skinless
  • 2 tbsp chicken broth
  • 1 tbsp lemon juice
  • ¼ tsp honey
  • ½ tsp garlic minced
  • ¼ tsp Italian seasoning
  • 1 pinch dried rosemary
  • 2 slices lemon
  • ¾ tsp olive oil
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400º.
  • Whisk the first 7 ingredients together.
  • Heat the olive oil in a skillet on medium-high heat. Brown the chicken breasts on both sides till golden brown and lightly salt to taste. Transfer the chicken to a baking dish.
  • Pour the prepared mixture over the chicken, lay fresh lemon slices in the pan around the chicken, and bake for 20-30 minutes or until it reaches an internal temperature of 165º. I basted the chicken with the lemon mixture halfway through cooking time. Enjoy!
