This easy-baked lemon chicken is perfect for your busy weeknights but delicious enough to make for a special occasion!

Ingredients
- 1 chicken breast (boneless, skinless )
- 2 tbsp chicken broth
- 1 tbsp lemon juice
- ¼ tsp honey
- ½ tsp garlic (minced)
- ¼ tsp Italian seasoning
- 1 pinch dried rosemary
- 2 slices lemon
- ¾ tsp olive oil
- salt and pepper (to taste)
Instructions
- Preheat the oven to 400º.
- Whisk the first 7 ingredients together.
- Heat the olive oil in a skillet on medium-high heat. Brown the chicken breasts on both sides till golden brown and lightly salt to taste. Transfer the chicken to a baking dish.
- Pour the prepared mixture over the chicken, lay fresh lemon slices in the pan around the chicken, and bake for 20-30 minutes or until it reaches an internal temperature of 165º. I basted the chicken with the lemon mixture halfway through cooking time. Enjoy!
