Cook ground beef in a pot, breaking it up as it cooks. Place cooked meat in a bowl to add later.
In the same pot you cooked the beef, add the sesame oil and ginger and cook over medium heat for 2 minutes.
Wash bok choy and cut it into bite-size pieces. Add to the pot and cook for 3 additional minutes.
Slice green onion and shitake mushrooms and add to pot along with the broth, bamboo shoots, hot chili oil, and soy sauce, and ground beef. Simmer for 7-9 minutes. Once heated through, it is ready to serve.
You can add siracha or another hot sauce to spice it up a bit. Enjoy!
