Lemon Garlic Shrimp, Asparagus, and Gnocchi 

Gnocchi is a hearty addition to this is a wonderful combination.

Ingredients

  • 2 ½ tbsp olive oil
  • cup gnocchi
  • 2 cloves garlic minced
  • ¾ cup asparagus
  • ½ red pepper diced
  • 2 ½ tbsp chicken broth reduced sodium
  • ¼ pound shrimp chopped
  • 1 tbsp lemon juice
  • 1 tbsp parmesan cheese grated - vegan options available if dairy free
  • 1 tbsp fresh parsley chopped, optional

Instructions

  • Bring pot of water to a boil. 
  • Add asparagus and peppers and cook for 4 minutes. Add gnocchi and cook for an additional 2 minutes. Add shrimp and cook for an additional 2 minutes. Strain all ingredients and keep in the strainer.
  • In the same pan add the olive oil and place over medium heat. To that pan add minced garlic and cook for 2 minutes.
  • Turn off heat and stir in the broth, lemon juice, and the gnocchi, and vegetables from the strainer.
  • Plate the ingredients. Top with cheese (optional) and parsley and serve.
