Ingredients
- 2 ½ tbsp olive oil
- ⅔ cup gnocchi
- 2 cloves garlic (minced)
- ¾ cup asparagus
- ½ red pepper (diced)
- 2 ½ tbsp chicken broth (reduced sodium)
- ¼ pound shrimp (chopped)
- 1 tbsp lemon juice
- 1 tbsp parmesan cheese (grated - vegan options available if dairy free )
- 1 tbsp fresh parsley (chopped, optional)
Instructions
- Bring pot of water to a boil.
- Add asparagus and peppers and cook for 4 minutes. Add gnocchi and cook for an additional 2 minutes. Add shrimp and cook for an additional 2 minutes. Strain all ingredients and keep in the strainer.
- In the same pan add the olive oil and place over medium heat. To that pan add minced garlic and cook for 2 minutes.
- Turn off heat and stir in the broth, lemon juice, and the gnocchi, and vegetables from the strainer.
- Plate the ingredients. Top with cheese (optional) and parsley and serve.
