Dark Chocolate Peanut Butter Bars

Ingredients

Base

  • 1 date
  • 1 tsp coconut oil
  • 2 tbsp almond flour
  • 2 tsp peanut butter natural, no sugar added
  • tsp vanilla
  • ½ tsp maple syrup

Topping

  • 1 tbsp dark chocolate chips use dairy-free if needed
  • tsp peanut butter natural, no sugar added
  • tsp coconut oil
  • tsp vanilla

Instructions

  • Cover dates with 2 tbsp hot water. Let sit for 10 min.
  • Put dates and coconut oil in a blender and blend.
  • Put blended dates in a bowl. Add flour, peanut butter, vanilla, and syrup and stir.
  • Press base into the bottom of a prepared baking dish.
  • Topping: In double boiler (pot over a pot with boiling water) add chocolate chips, peanut butter, coconut oil and vanilla. Stir over the boiling water until melted.
  • Pour topping mixture over the base and let set until firm before serving. Placing it in the refrigerator will speed this up.
