Ingredients

  • 2 slices bacon uncured/no nitrate; cooked and crumbled
  • 1 green onions sliced
  • 1 cups potatoes diced; I recommend golden potatoes
  • cup celery sliced
  • cloves garlic minced
  • 6 oz clams in juice, undrained, chopped
  • cup vegetable broth
  • ¼ tsp white pepper
  • tsp dried thyme
  • tsp salt
  • cups almond milk unsweetened
  • cup fresh parsley

Instructions

  • Add bacon, green onions, potatoes, celery, garlic, clams, broth, white pepper, thyme, salt and the juice to a large pot. Cover and simmer over med/low heat for 20 minutes or until potatoes are just just soft.
  • Add milk and cook additional 5 minutes until hot. Pour into bowls and top with parsley.
