Pork (or chicken) and Quinoa Burrito

Ingredients

  • 1 corn tortilla can use flour tortillas
  • 3 oz chicken sliced, can use pork
  • ¼ cup cooked quinoa cook according to package
  • ¼ cup salsa
  • 1 tbs low-fat plain yogurt or substitute dairy-free yogurt
  • ½ tomato diced
  • ¼ cup lettuce chopped, can use spinach or kale

Instructions

  • Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
  • Place the tortilla on a plate and divide the filling ingredients equally placing into the middle of each tortilla. Roll up and enjoy!
