- 1 corn tortilla can use flour tortillas
- 3 oz chicken sliced, can use pork
- ¼ cup cooked quinoa cook according to package
- ¼ cup salsa
- 1 tbs low-fat plain yogurt or substitute dairy-free yogurt
- ½ tomato diced
- ¼ cup lettuce chopped, can use spinach or kale
Get Recipe Ingredients
Mix pork (or chicken), quinoa, salsa, yogurt, lettuce and tomato.
Place the tortilla on a plate and divide the filling ingredients equally placing into the middle of each tortilla. Roll up and enjoy!
