Grilled Chicken with Peach Salsa
This sweet-hot peach salsa is a lovely way to compliment chicken.

- 1 ½ peach peeled and diced
- ¼ jalapeño pepper seeded and minced
- 1 ½ tsp red onion finely chopped
- ⅛ cup fresh cilantro chopped
- ¼ cup red bell pepper chopped, can substitute grape tomatoes
- 1 lime freshly squeezed
- salt and pepper to taste
- 1 chicken breasts skinless
- ½ tsp olive oil
- ½ lime juiced
- 1 tsp ancho chili powder

Simply mix the first seven ingredients together, and allow the mixture to sit at room temperature for 30 minutes to let the flavors combine.
Meanwhile, preheat a grill to medium-high heat. Grill the chicken until it reaches an internal temperature of 165.
Mix the lime juice and the olive oil together and brush onto the chicken breasts. Season each breast evenly with salt, pepper, and ancho chili powder.
Top the chicken with the peach salsa to serve! Enjoy!
