Grilled Chicken with Peach Salsa

This sweet-hot peach salsa is a lovely way to compliment chicken.

Ingredients

  • 1 ½ peach peeled and diced
  • ¼ jalapeño pepper seeded and minced
  • 1 ½ tsp red onion finely chopped
  • cup fresh cilantro chopped
  • ¼ cup red bell pepper chopped, can substitute grape tomatoes
  • 1 lime freshly squeezed
  • salt and pepper to taste
  • 1 chicken breasts skinless
  • ½ tsp olive oil
  • ½ lime juiced
  • 1 tsp ancho chili powder

Instructions

  • Simply mix the first seven ingredients together, and allow the mixture to sit at room temperature for 30 minutes to let the flavors combine.
  • Meanwhile, preheat a grill to medium-high heat. Grill the chicken until it reaches an internal temperature of 165.
  • Mix the lime juice and the olive oil together and brush onto the chicken breasts. Season each breast evenly with salt, pepper, and ancho chili powder.
  • Top the chicken with the peach salsa to serve! Enjoy!
