Frijoles con Elote (Mexican Beans & Corn)

A healthy, super simple side dish! It has just a few ingredients, most of which you may already have on hand and it can be thrown together in under 10 minutes!

Ingredients

  • ½ cup black beans drained and rinsed
  • ½ cup kidney beans drained and rinsed
  • ½ cup corn canned, drained, and rinsed
  • 1 tbsp green chilies
  • 1 tbsp red peppers diced
  • ½ clove garlic
  • ¾ tsp olive oil
  • ½ tsp chili powder
  • ¼ tsp salt
  • ¾ tsp cilantro optional

Instructions

  • Add the olive oil to a saucepan. Sauté the garlic until browned.
  • Drain and rinse the beans and corn. Add to a saucepan on medium heat for 5 minutes.
  • Add the green chiles, chili powder, and salt and stir well.
  • That’s it! Put in a nice bowl and it is ready to serve! If using cilantro, finely chop and sprinkle on top. Enjoy!
