Partially fill a pot with water and bring it to a light boil. Add broccolini. Cook for 5 min. Add gnocchi to the same pot and cook an additional 5 minutes or until gnocchi begins to float to the top.
In a separate pan, sauté sausage. Chop up sausage as it cooks to break into small pieces.
Drain the broccolini and gnocchi and then add to the pan of sausage. Add the olive oil and stir.
Plate the broccolini, gnocchi, and sausage, top with shaved* or grated Parmesan cheese, and season with salt and pepper.
*I like to use a potato peeler for the parmesan cheese to shave longer ribbons to give it a more elegant look!
