Vegetable Bread Pudding with Blue Cheese

Ingredients

  • cup vegetables cooked, pick your favorites/frozen veggies will work
  • 4 tsp blue cheese crumbled
  • slice bread cut into cubes
  • 1 egg
  • 2 ½ tbsp flour
  • 4 tbs almond milk no sugar added; can substitute cow's milk
  • cooking spray be sure the spray has only oil listed as ingredients. I suggest avocado or grape seed oil

Instructions

  • Preheat the oven to 375º and use the cooking spray to coat your casserole dish. Mix all your ingredients in a casserole dish. Place in the oven and cook for 25 minutes or until set.
