Italian Caponata

Ingredients

  • ½ tomato ripe
  • 1 clove garlic roughly chopped
  • ¼ cup eggplant diced
  • 1 ½ tsp basil
  • 2 tbsp onion diced
  • 1 ½ tsp balsamic
  • 1 ½ tsp olives chopped, pits removed
  • ¼ cup water

Instructions

  • Heat up a frying pan to medium heat and add tbsp olive oil, garlic, onion. Cook for about 5 minutes and stir occasionally so it doesn't burn.
  • Add all other ingredients and continue to stir.
  • Add a cup of water and reduce heat to low to simmer for 40-60 minutes. After that time, remove from heat and place in a bowl to cool.
