- ½ tomato ripe
- 1 clove garlic roughly chopped
- ¼ cup eggplant diced
- 1 ½ tsp basil
- 2 tbsp onion diced
- 1 ½ tsp balsamic
- 1 ½ tsp olives chopped, pits removed
- ¼ cup water
Get Recipe Ingredients
Heat up a frying pan to medium heat and add tbsp olive oil, garlic, onion. Cook for about 5 minutes and stir occasionally so it doesn't burn.
Add all other ingredients and continue to stir.
Add a cup of water and reduce heat to low to simmer for 40-60 minutes. After that time, remove from heat and place in a bowl to cool.
