Ingredients
- ½ tomato (ripe)
- 1 clove garlic (roughly chopped)
- ¼ cup eggplant (diced)
- 1 ½ tsp basil
- 2 tbsp onion (diced)
- 1 ½ tsp balsamic
- 1 ½ tsp olives (chopped, pits removed)
- ¼ cup water
Instructions
- Heat up a frying pan to medium heat and add tbsp olive oil, garlic, onion. Cook for about 5 minutes and stir occasionally so it doesn't burn.
- Add all other ingredients and continue to stir.
- Add a cup of water and reduce heat to low to simmer for 40-60 minutes. After that time, remove from heat and place in a bowl to cool.Â
