Loco de Papa (Ecuadorian Potato Soup)

Ingredients

  • ½ lb potatoes cubed, skins on(try and use golden or russet potatoes)
  • ¼ onion diced
  • 2 cloves garlic
  • ¼ tsp achiote oil can substitute 1 tsp of olive oil with 1/4 tsp of paprika and 1/4 tsp of turmeric
  • tsp cumin
  • ¼ tsp salt
  • cup milk can also use almond or coconut
  • vegetable broth can substitute chicken broth, use to achieve desired consisitency

Instructions

  • Put your cubed potatoes, onion, and garlic into a pot with simmering water. Continue to simmer until your potatoes are cooked and tender.
  • Place all ingredients, including the cooked potatoes, into a blender and blend until smooth. It is supposed to be thick but if it's too thick, add a bit of broth.

Notes

Possible toppings for soup
sliced up avocado
a few sprigs of parsley
a sprinkle of cheddar or Parmesan cheese
a few sprinkles of spicy pepper
