Whole Wheat Apricot Muffins

Ingredients

  • 1 ½ cup whole wheat flour or gluten-free flour
  • ¼ cup honey
  • ¼ cup flax seed ground
  • ¼ cup chia seeds
  • 1 ½ tsp grated orange
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup milk dairy-free optional
  • ½ cup low-fat plain yogurt
  • ¼ cup coconut oil melted, can substitute butter
  • 1 egg beaten
  • 1 cup apricots finely chopped

Instructions

  • Heat oven to 375°.
  • Put all ingredients into a large bowl and mix well.
  • Pour batter into greased muffin tins
  • Cook for 15-20 minutes.
