Shrimp ceviche (Ceviche de Camarón)

Ingredients

  • 2 ½ oz shrimp peeled and deveined
  • 2 ½ tbsp red onion dice small
  • 2 ½ tbsp tomatoes diced
  • 2 tsp cilantro chopped
  • 2 tsp lemon juice freshly squeezed, can substitute lime juice
  • 4 tsp orange juice freshly squeezed
  • 1 tsp jalapeno minced, seeds removed
  • 1 tsp Dijon mustard
  • clove garlic minced
  • ½ tsp oil
  • salt and pepper to taste

Instructions

  • Heat up a pan on medium heat and add garlic and oil. Add in shrimp and cook for 2-3 minutes. Do not overcook.
  • In a separate bowl, add lemon or lime juice, orange juice, jalapeños, tomatoes, mustard, onions, salt, and pepper. Mix.
  • Add the shrimp and chill in the refrigerator for an hour or two.
  • Garnish with cilantro and serve with tortilla chips or plantain/banana chips.
