Shepherd's Pie

Ingredients

Filling

  • ¼ cup celery diced
  • ¼ cup red pepper diced
  • ¼ cup peas
  • ¼ cup yellow onion diced
  • ½ lb ground beef grass-fed preferred
  • cup tomato paste
  • ½ tbsp Worcestershire sauce gf options available
  • ½ tbsp dried basil

Topping

  • 1 cup cauliflower cooked
  • ¼ cup milk
  • cup parmesan cheese

Instructions

  • Preheat oven to 350 F.
  • Cook the ground beef in a pan on the stovetop, chopping as it browns. Set aside.
  • Heat a large frying pan on medium or medium-high. Add in all the vegetables (celery, red pepper,  peas, and yellow onion) and cook until done. Leave in pan and set aside.
  • In separate mixing bowl add tomato paste, Worcestershire sauce, dried basil and stir.
  • Put beef, vegetables, and tomato paste mixture together and stir well.  Then, scoop the mixture into a prepared baking dish.
  • For the topping, blend cooked cauliflower, with milk, cheese. Cover the veggie/meat mixture with the cauliflower mixture and then put in oven and cook for 30 minutes.
