Banana Pan Cookie

- 1 ½ banana the riper the better!
- 1 egg
- ½ tsp vanilla
- ½ tsp baking powder
- ¾ cup flour almond, whole wheat or white
- ¼ tsp pecans chopped
- 2 tbsp dark chocolate chips or semi-sweet chocolate

Preheat oven 375º.
Place all the ingredients into a blender or food processor, and blend well.
Stir in the chocolate chunks and the pecans.
Pour mixture into a greased pan and bake for 20-25 minutes. You can test doneness - if a toothpick inserted comes out clean, it's done.
Makes 4 servings. Can serve it with a bit of your favorite nut butter on top.
