Banana Pan Cookie

Bananas and chocolate are a great combo!

Ingredients

  • 1 ½ banana the riper the better!
  • 1 egg
  • ½ tsp vanilla
  • ½ tsp baking powder
  • ¾ cup flour almond, whole wheat or white
  • ¼ tsp pecans chopped
  • 2 tbsp dark chocolate chips or semi-sweet chocolate

Instructions

  • Preheat oven 375º.
  • Place all the ingredients into a blender or food processor, and blend well.
  • Stir in the chocolate chunks and the pecans.
  • Pour mixture into a greased pan and bake for 20-25 minutes. You can test doneness - if a toothpick inserted comes out clean, it's done.

Notes

Makes 4 servings. Can serve it with a bit of your favorite nut butter on top.
