White Bean, Fennel and Sausage Soup

Ingredients

  • 1 tsp oil grapeseed or avocado are ideal
  • fennel bulb diced
  • medium onion
  • ½ clove garlic
  • tsp crushed red pepper more or less to taste
  • cup chicken broth
  • lb chicken sausage Italian is preferred, chopped
  • ½ cup white beans drained
  • fennel greens optional
  • salt and pepper to taste

Instructions

  • Use a non-stick pan or cast iron skillet to cook chicken sausage until done. Set aside.
  • Add oil to a large pot and heat on the stovetop over medium heat. Add fennel, onion, and garlic. Stir then cover and cook for 5 min.
  • Add broth and red pepper and cook for 15 min. Add sausage and beans and cook additional 10 min. Add salt and pepper to taste.
  • Serve in bowls and top with minced fennel greens (optional).
