Healthy and Light Cous Cous Salad

This makes for a great side. Add some protein and you can serve it as a meal.

Ingredients

  • ¾ cup couscous prepared according to package
  • ½ cup spinach packed - can substitute arugula
  • ¼ cup tomatoes diced
  • 2 tbsp feta cheese
  • 1 tbsp onion diced
  • lemon juiced
  • 4 tsp olive oil
  • salt and pepper to taste
  • balsamic optional to drizzle on top

Instructions

  • Put cooked couscous into a larger bowl, and mix in the spinach, tomatoes, feta cheese, onion, lemon juice, olive oil, and salt and pepper. Mix well. Serve immediately or let chill for 1 hour before serving.
