Ingredients
- ¾ cup couscous (prepared according to package)
- ½ cup spinach (packed - can substitute arugula )
- ¼ cup tomatoes (diced)
- 2 tbsp feta cheese
- 1 tbsp onion (diced)
- â…› lemon (juiced)
- 4 tsp olive oil
- salt and pepper (to taste)
- balsamic (optional to drizzle on top)
Instructions
- Put cooked couscous into a larger bowl, and mix in the spinach, tomatoes, feta cheese, onion, lemon juice, olive oil, and salt and pepper. Mix well. Serve immediately or let chill for 1 hour before serving.
