Crack eggs into a medium-sized bowl and mix with a whisk or a fork.
Coat the bottom and sides of a baking pan with 1 tbsp olive oil.
Take your sweet potato (already baked) and take the skin off. Cut your sweet potato into bite-size chunks and sauté in a pan with 1 tbsp olive oil for about 5 minutes. Add the kale and cook until it is wilted.
Put the sweet potato and kale in your prepared baking pan. Pour eggs over sweet potatoes and kale. Add crumbled goat cheese over the egg mixture.
Bake in a preheated 375º for 15 minutes, let cool for 10 minutes, and then enjoy!

Makes 2 servings. You can add some cooked quinoa into the mixture right before you put it in the oven for added protein
