Sweet Potato and Kale Frittata

There are so many variations of a frittata you can try. This one is a winner!

Ingredients

  • ½ sweet potato baked, with skin on
  • 1 cup kale packed, rib removed
  • 3 eggs beaten together
  • 1 ½ tbsp goat cheese
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Crack eggs into a medium-sized bowl and mix with a whisk or a fork.
  • Coat the bottom and sides of a baking pan with 1 tbsp olive oil.
  • Take your sweet potato (already baked) and take the skin off.  Cut your sweet potato into bite-size chunks and sauté in a pan with 1 tbsp olive oil for about 5 minutes. Add the kale and cook until it is wilted.  
  • Put the sweet potato and kale in your prepared baking pan. Pour eggs over sweet potatoes and kale. Add crumbled goat cheese over the egg mixture.
  • Bake in a preheated 375º for 15 minutes, let cool for 10 minutes, and then enjoy!

Notes

Makes 2 servings. You can add some cooked quinoa into the mixture right before you put it in the oven for added protein
