(Healthy!) Fried Chicken

This chicken is still fried but in a healthy oil and not much of it!

Ingredients

  • 1 large chicken breast can substitute 2 chicken thighs
  • 1 egg
  • cup cornmeal
  • ½ cup bread crumbs
  • 1 tbsp grape seed oil or avocado oil
  • herbs your choice

Instructions

  • Whisk egg for egg wash.
  • Butterfly chicken breast to create a thinner piece of chicken to allow faster cooking time.
  • Coat chicken in corn meal, then the egg wash, then finally in bread crumbs (make sure to coat both sides!).
  • Place chicken in a heated pan with 1 tablespoon of oil. Cook, flipping the chicken occasionally so as not to burn.
  • Top with some sprigs of your favorite herbs if you would like and enjoy!
